Easy Healthy Breakfast Donuts with Strawberry Whip topping

My kids cannot get enough of these yummy, healthy breakfast donuts.  They are super easy to make and are a nice change of pace to the old standby offerings :). These donuts are full of antioxidants, omega-3 fatty acids, protein and fiber. They re gluten free, nut free, oil free, soy free and refined sugar free! Yeah!!!

This recipe is inspired by Angela Liddon's amazing cookbook called Oh She Glows  with a few tweaks from me * XO Enjoy

Makes 12 donuts:

Prep Time: 10 minutes

Cook time: 22-24 minutes


1 1/2 cup oat flour

1 cup chia seeds

3 tsp. baking powder

1 tsp. cinnamon

2/3 cup pure maple syrup

2/3 cup non-dairy milk

2 tsp. vanilla + 1 tsp for whip

1 can coconut cream (best if refrigerated overnight)

4 fresh strawberries


Preheat oven to 300 degrees.  

Take out two mixing bowls.

In the first bowl, combine oat flour, chia seeds, baking powder and cinnamon and stir well. In the second bowl combine maple syrup, non-dairy milk and vanilla and stir.

Pour wet ingredients into bowl with dry ingredients and stir to combine.

Lightly grease a 6 cavity donut pan and use a spoon to fill each one with the donut mix.  Put in the oven and bake 22-24 minutes.

Meanwhile, open the can of coconut cream and scoop out only the top level hardened cream (pour the liquid out or save and use for smoothies), add vanilla and 4 strawberries chopped into little pieces.  Mix with an electric mixer until it combines and forms a whip!

You can either dip baked donuts in the whip and spread on top.  Enjoy!
