
Vegetable Sushi Bowls (adapted from Superfood Kitchen by Julie Morris)
These can be made into mini bowls for appetizers or large bowls for a main course. They are easy to make, delicious and fun. Wash, dice and set out ingredients so each family member or guest can make their own bowl.
- 3 cups white or brown rice
- 1 nori sheet torn into strips
- 2 avocados peeled and diced
- 1 carrot , grated
- 1 bell pepper, sliced
- 1 cucumber, peeled and sliced
- 2 handfuls sprouts
- Prepare rice and veggies and set out in bowls
- Pour dressing over the top
Dressing (from Superfood Kitchen by Julie Morris)
- ½ cup apple juice
- 2 tbsp. miso paste
- 2 tbsp. peeled ginger root
- 2 large date,pitted
- 1 tbsp + 1 tsp. apple cider vinegar
Blend ingredients until smooth and pour over finished bowls! Enjoy!
