Vegetable Sushi Bowls

Vegetable Sushi Bowls (adapted from Superfood Kitchen by Julie Morris)

These can be made into mini bowls for appetizers or large bowls for a main course.  They are easy to make, delicious and fun.  Wash, dice and set out ingredients so each family member or guest can make their own bowl.

  • 3 cups white or brown rice 
  • 1 nori sheet torn into strips
  • 2 avocados peeled and diced
  • 1 carrot , grated
  • 1 bell pepper, sliced
  • 1 cucumber, peeled and sliced
  • 2 handfuls sprouts
  • Prepare rice and veggies and set out in bowls
  • Pour dressing over the top 

Dressing (from Superfood Kitchen by Julie Morris)

  • ½ cup apple juice
  • 2 tbsp. miso paste
  • 2 tbsp. peeled ginger root
  • 2 large date,pitted
  • 1 tbsp + 1 tsp. apple cider vinegar

Blend ingredients until smooth and pour over finished bowls! Enjoy!
